You might take a look at the Awesome MacOS List on GitHub. It's not directly discounted, you can find many open source solutions there. alternativeto (the website) is also a great source to find new apps you haven't heard of.

Actually, most of these apps have open-source alternatives on GitHub. If an open-source project provides real value for you, I think paying for it is absolutely reasonable—it’s a way to support the developer and keep the project alive.

Along with students discount you should probably look into free and open source software. That way you don’t have to worry about paying bigger licensing fees once you graduate.

For a brand new MacBook, I would start with free basics before chasing discounts: Rectangle for window snapping, Maccy for clipboard history, AppCleaner for uninstalling apps, IINA for video, Zotero if you deal with papers/citations, CotEditor or VS Code for quick text/code edits, and either Obsidian/Logseq/Apple Notes depending on how heavy your note-taking is. Then only pay for student-discount apps once you know the pain point. JetBrains is great if you code, Setapp can be good value if you actually use several apps in it, and DEVONthink/OmniFocus-type tools are worth it only if your workflow is already asking for that level of structure. Discounts are tempting, but the best student setup is usually a small toolkit you actually use every day.
