shopify's permission tree is a pain for this. the closest you get is "fulfill orders" + "view products" without giving payments/customers access. if you need finer-grain control most ops teams end up using a fulfillment app (shipstation, shipmonk) and giving the staff access there instead of shopify admin. shopify's never going to be slack-level granular.
