Sorry for the bad formulation of the question. I have notability. What bothers me is that It’s just new documents every time. Is there something where there’s for example in the top row tabs so you can have some organization in one topic. Or being able to swipe through like in a book so it’s like an actual notebook

OneNote uses a Notebook > Section > Page hierarchy. The sections appear as tabs across the top (or side, depending on your settings), which makes it very easy to keep related notes grouped together within a single notebook. GoodNotes uses actual "notebooks" with covers. Inside, you can organize your pages. It also uses a tabbed interface at the top, allowing you to have multiple notebooks or documents open at once and switch between them instantly.
