Weird question, Fairly small/growing company and I'm starting to get overwhelmed with requests that need approvals from different heads(purchase, leave, payment requests) . Right now I just use teams approvals but that's limited in terms of tracking or editing a request. Software recommendations?

I believe most ticketing systems provide this functionality, and even if they don’t a ticket can be used to track the approval. They’ll also have routing rules to automatically deliver the ticket to the responsible owner (eg: HR for leave requests, Procurement for new software requests, etc).
build a powerapp and write the request info to a sharepoint list. depending on the complexity of the request you could also just use a sharepoint list form.
Your ticket system might have some of this functionality depending on what you use or as others suggest, if you are an MS shop then Power Automate should be able to do what you need with a little work (iirc there are templates for common uses that you can probably use too).
For a small/growing company, Jira Service Management or Freshservice both handle multi-type request workflows with proper tracking and approval chains without being overkill. If you're already in Microsoft 365, Power Automate with SharePoint lists is free and surprisingly capable for this exact use case - more setup but no extra cost. What's the main gap with Teams Approvals right now - is it the tracking, the inability to edit submitted requests, or something else?

You should use power automate. It’s pretty simple to setup and will keep your data and flows inside the M365 ecosystem. You can use connectors to plug your workflow into multiple sources
