This actually works well. We put out something like an alkaseltzer and a few MiO drink mixes with dinner sometimes and the kids have a ball

no one beleives me when i tell them the reason i dont like soda is that i dont like the flavor from the carbonation. A friend i know spent some time in texas away from their home in california, they said they could not drink soda much in texas because it all tasted weird from the carbonation there vs california.

What do we call the act of putting nitrogen in drinks? Nitrogenation? Nitrogen Carbonation? I don't like nitro drinks, I think they taste really weird and just like a flat version of whatever you were drinking in the first place
They make them already, nitrogen seems to be used more. Past that, carbonation inherently changes flavor.
I have a 'Mosa Splash' portable soda steel flask that has a sparklet attachment that allows you to carbonate about 75cl at a go. It is really versatile. Aside from just carbonating water, you can gas up a cheap bottle of Italian wine and make Prosecco in about 45 minutes. Because it can also use nitrogen chargers it can also be used for Nitro brewed coffee. By far my favourite infused vodkas and Gin. A cup of fresh raspberries or lemon peel and sugar in with some supermarket gin. Put under pressure with Nitrogen will infuse the gin with a fresh raspberry flavour overnight. The resultant raspberry are great on icecream too. Looks like they didn't take off but there must be some on ebay. Really worth it if you can track one down.
Dry ice does this. If you don't want to be carrying around dry ice, they make a product called the Fizz Giz, but you don't drop it in the drink. You have to have food safe co2 cartridges and the special caps that twist on to a soda bottle though. It works, but you only get a few carbonations out of one co2 canister.
There are two ways to get bubbles: a chemical reaction (Alka-Seltzer) or dissolved gases escaping from the liquid. I think any chemical reaction would change the flavor, so I'm going to ignore that option. The challenge for the remaining option is creating the right environment for gas to dissolve into the liquid. Every drink that has carbonation is pressurized until it's open to be drank. Upon opening, the pressure drops to that of the surrounding atmosphere, which allows the dissolved bubbles to try to escape. For a portable option, you could bring a home whipped cream dispenser with you and inject carbon dioxide or nitrogen from a whippet charger. Nitrogen is the best option to avoid a change in the flavor. Carbon dioxide chargers would make the flavor more acidic. Nitrogen, while inert and flavorless, tastes sweet to humans when dissolved in liquids. There's definitely a way to do something like this on a small scale, but it won't feel super portable. You'll notice that whipped cream dispensers have fairly robust aluminum or stainless steel walls that are about 3mm thick. If the walls aren't thick enough, you're just making a miniature compressed gas pipe bomb. Edit: Found something: https://www.bespokepost.com/store/aerflo-aer1-sparkling-water-system
You would need Co2 and a pressure vessel big enough for the drink, or maybe you could do it with dry ice. Not the most convenient stuff to carry. Plus, if you pressurize anything other than plain water if foams all over to hell and gone.
Dry ice. It'd be a pain to store, carry, and use - you need gloves or tongs to handle it, and a cooler to keep it in, and then you need to let it melt/dissolve/sublimate fully in whatever you put it in before drinking. But it wouldn't take much to chill and carbonate whatever drink you wanted. Juice, milk, ramen noodle soup, you name it.

Dry ice does this. You said portable, you didn’t say stable.
This is why they invented pop rocks......you described non-flavored pop rocks.
its just carbon dioxide, pressurized to dissolve into the drink. The carbon dioxide is literally all around you, you just need a pump to pressurize it.
