Hey I've been hosting various services in my homelab for awhile but im looking to branch into some smart home stuff as well. Is there a FOSS/self hosted service that functions as a dashboard for temperature and humidity sensors that you could place around the house? additionally is there some self hostabke version of Nest-type thermostat that could be reached via LAN (or VPN if i felt like accessing remotely, I guess)? Thanks for any recommendations!

This sounds great and looking into it, this looks exactly like what I need. I'm assuming if you get some big-tech device like a NEST that always wants to phone home, the best bet would be to just cut off its internet connection at the router (but allow it on the network locally) and funnel commands through home assistant to control remotely? As a way to maintain some privacy, I mean.
If the device does work without the cloud then yes. Not every device supports a local way. Often homeassistsnt integrations use the official cloud connection to pull information.

I could have it wrong but I believe the Honeywell thermostats don't phone home. Tado does although if internet falls away it will work locally same as the Nest you do need wifi however to initialize it.
Home assistant integrates with everything from my thermostat to my lights to my TVs to my power supply and solar panels. Depending on the brand it can control some stuff better than others.
You could get a Venatar thermostat for local API.
I did this with cheap Aqara temp/humidity sensors. Working great in Home Assistant. I had to pair them relatively close to the Zigbee antenna, but after that they work okay at about 30 feet.
Like others said Home Assistant is what you're looking for. start with some inexpensive temperature and humidity sensors for monitoring, add HVAC control once you're happy with the setup
